A bread machine, or breadmaker
A bread making machine or breadmaker is a home appliance for turning raw ingredients into baked bread. It consists of a bread pan (or “tin”), at the bottom of which are one or more built-in paddles, mounted in the center of a small special-purpose oven. This small oven is usually controlled by a simple built-in computer using settings input via a control panel. Most bread machines have different cycles for different kinds of dough—including white bread, whole grain, European-style (sometimes labelled “French“), and dough-only (for pizza dough and shaped loaves baked in a conventional oven). Many also have a timer to allow the bread machine to activate without operator attendance, and some high-end models allow the user to program a custom cycle.

Although bread machines for mass production had been made for industrial use long before, the first self-contained breadmaker for household use was released in Japan in 1986 by the Matsushita Electric Industrial Co. (now Panasonic) based on a year of research by project engineers and software developer Ikuko Tanaka who trained with the head baker at Osaka International Hotel to learn how to optimally knead bread, and involved adding special ribs inside the machine.[1]
A decade later they had become popular in the United Kingdom, Australia and the United States. While not viable for commercial use due to the fixed loaf shape and the limited duty cycle, bread machines are very suitable for home use, producing their best results when dealing with kneaded doughs.[2]
Use and features[edit]
To create a loaf of bread, ingredients are measured into the bread pan in a specified order (usually liquids first, with solid ingredients layered on top) and the pan is then placed in the breadmaker. The order of ingredients is important because the instant yeast used in breadmakers is activated by contact with water, so the yeast and the water must be kept apart until the program starts.
The machine takes a few hours to make a loaf of bread. The ingredients are first rested and brought up to optimal temperature. The ingredients are then turned into a dough by stirring with a paddle. The dough is then proofed using ideal temperature control, and then baked.
Once the bread has been baked, the pan is extracted from the breadmaker, leaving a small indentation or hole from the rod the paddle attaches to. The shape of the finished loaf is often considered unusual, with many early bread machines producing a vertically oriented, square or cylindrical loaf very different from commercial breads; however, more recent units generally have a more traditional-appearing horizontal pan. Some bread machines are in the standard rectangle shape two lb loaf using two paddles. One of the Zojirushi models even has a heating element in the lid to brown the crust.[3]

Bread machine recipes are often somewhat smaller than standard bread recipes, and are sometimes standardized based on the capacity of the machine’s pan; most common in the United States market are 1.5 lb/700g units, and the majority of recipes are written for that capacity; however, 2 lb/900g units are not uncommon either. Packaged bread mixes are available, specifically designed for breadmakers, containing premeasured ingredients including flour and yeast, as well as flavorings and occasionally dough conditioners. Only water usually needs to be added. Bread machines generally do not deal well with non-wheat flours, so any recipe that requires a substantial addition of a grain such as rye or corn that lacks gluten will prove difficult at best in a bread machine, as will any dough with unusually large amounts of liquid (such as ciabatta).
Generally, homemade bread goes stale faster than bread from a commercial baker because the former does not include preservatives. However, it is possible (though a bit more difficult) to use a natural leaven or a pre-ferment in breadmaker dough recipes if the starter is sufficiently fast to rise. Sourdough contains a symbiotic culture of yeast and lactobacteria; the yeast provides some flavor as well as carbon dioxide to provide lift, while lactic acid produced by sourdough’s lactobacteria greatly preserves bread, as well as affecting its flavor, while pre-ferments provide some of the same benefits as a sourdough culture with the greater predictability of domesticated baker’s yeast.
Breadmakers are often equipped with a timer to control when the breadmaking begins. This allows them, for example, to be loaded in the evening but only begin baking early in the morning, to produce a freshly baked loaf for breakfast. They can also be set only to make dough, for instance to be used to make pizza. Some can also be set to make other things besides bread, such as jam, pasta dough, udon or mochi, a kind of Japanese rice cake. One of the most recent innovations is the facility to add nuts and fruit during the kneading process automatically from a tray.[4]
Traditionally, breadmakers take between three and four hours to bake a loaf. However recently “fast bake” modes have become common additions, many of which are able to produce a loaf in under an hour. The bread is generally not of as good quality as that produced by a longer program, but for many users this is a useful feature.
Some breadmakers sold in the 1990s had vertical pans, some horizontal. Today, the vast majority available retail make horizontal loaves. For that reason, they produce a smaller, shorter loaf than their predecessors. It is more difficult to mix a long, horizontal loaf because the ends are distant from the mixer-paddle and gravity does not assist the distribution of the dough. Some machines attempt a better kneading by using two paddles, one at each end. The vertical loaf machine may require a higher powered motor, because the entire mass of the dough-ball is on the paddle as it kneads the dough against the nearby sides of the loaf-pan. Economy in production may account for the manufacturer’s preference towards horizontal loaf-pans. Finally, a vertical loaf-pan yields a uniform slice from end to end of the loaf rather than a loaf that is smaller at the ends.
Most of the best bread machines have a cold wall which usually protects the surface getting hotter during the baking process.

Freshly made bread is the best thing since—well, the best thing since sliced bread! The only trouble is, it takes time and effort. Most people have never made bread in their lives and would never dream of doing so, but the recent invention of automatic breadmaking machines has started to change all that. Now, millions are turning their kitchens into bakeries and enjoy their own freshly baked loaf each day at a fraction of the cost they’d pay in a store. What’s the big attraction of bread-making machines? What are they like and how exactly do they work?

How to make bread (the old way)
Bread is one of the world’s oldest and most versatile foods. Just think of all the different types of bread (everything from a basic sliced white loaf to a really fantastic ciabatta or foccacia) and all the different ways we use dough (from simple loaves to rolls and pizza bases). Delicious!
Eating bread is an awful lot easier than making it—and that’s because bread-making is necessarily a time-consuming process. Even with the help of an automatic breadmaker, it still takes several hours to make a loaf because it takes that long for the yeast to do its job.

The basic process of making a loaf involves five distinct stages:
- Mixing: You take flour, yeast, water, fat, sugar, and salt and mix them together to make dough.
- Kneading: You have to beat and bash the dough around to make it stretchy and elastic. Without kneading, your dough won’t rise and you won’t get a decent loaf.
- Rising: Now you leave your dough in a warm place to rise for an hour or more. During this stage, the yeast does its job. Air enters the mixture and makes the dough plump up to about twice the size.
- Knocking down and proving: Some bakers believe you should repeat the rising process a second time to produce a more even loaf. First you bash the dough about to knock the air out of it (which is called knocking down). Then you leave the dough to rise a second time in a tin (which is called proving).
- Baking: Finally, you put the dough in a tin, place the tin in your oven, and bake.
How a breadmaking machine works

The great thing about an automatic breadmaker is that it does all these processes for you. A breadmaking machine is essentially a compact electric oven that will hold a single, large bread tin. The tin is a bit special: it has an axle at the bottom that connects into an electric motor underneath. A small metal paddle clicks onto the axle inside the tin. The axle is held by a waterproof seal so none of your bread mixture will escape.

So how does it all work? First, you put your paddle in the tin. With the tin out of the oven, you measure out your ingredients and load them up. All you have to do then is pop your tin in the oven, select the program you want using the electronic control panel, close the lid, and wait. If your breadmaker has a glass lid, you can watch what it’s doing. If the lid is opaque, you’ll have to listen and use your imagination. One of the first things you’ll hear is the machine’s motor whirring as the paddle spins round, kneading the dough. Then everything will go quiet during the rising phase. Then you’ll hear more kneading and another period of quiet during the proving. Finally, the oven will switch on, you’ll see steam coming up through the exhaust vent, and you’ll start to smell the delicious aroma of baking bread a few minutes later. The basic breadmaking process is largely automatic, but most machines come with recipe books for making more advanced types of dough.
Some breadmakers have other features, such as a built-in memory so they can survive short power outages (“blackouts”) of a few minutes: they remember what they were doing and continue when the power returns. Most breadmaking machines also have the ability to make a delayed start, so you can put the ingredients in before you go to bed and wake up to a fresh-baked loaf in the morning. (It’s worth noting, however, that if you leave a loaf in a hot machine after it’s done it will go on cooking and the crust will become noticeably harder—maybe to your taste, maybe not.)
What’s inside a breadmaking machine?

Here’s an illustration of one of Panasonic’s original breadmaking machines (taken from what I believe is the earliest patent they filed in the United States), which is very similar to the machine I’ve photographed for this article. What are all the bits and what do they do?

What kinds of bread can you make with a bread machine?

Most breadmakers have numerous different programs for making many different kinds of loaf. You can make white bread, wholemeal, or special loaves by using different kinds of flour and varying the other ingredients. You can see the various options that this breadmaker offers on its display panel (from the top: basic, wholemeal, multigrain, French, pizza, and bake only). For different breads, you simply put a slightly different mix into the tin at the start and select a different program from the display, and the breadmaker will handle different kneading, rising, and baking times, and so on automatically. (So French loaves get a longer rising time, wholemeal loaves get more preheating, sweet breads have longer kneading and rising times, and dark crusty breads get extra baking time.) Some breadmakers also offer a “fast-bake” (energy-saving mode) that delivers your loaf in about half the time, but you’ll get a somewhat less polished performance: not always such an even mix or spectacular rise. Baking bread takes time and patience and you can’t expect perfect results if you rush it.

If you prefer seeded loaves, just add a mix of your favorite seeds (linseed, poppy, sesame, sunflower, or whatever you like) to the ingredients. How easy are breadmakers to use?
Very! Programming a breadmaker is a simple operation:
- Select the type of bread (basic, wholewheat, multigrain, French, or pizza).
- Select the bake mode (bake, bake rapid, sandwich, dough). This varies the sequence of mixing, kneading, rising, and baking. For example, in dough mode, the machine stops without actually cooking the dough. At this point, you open up the lid, remove the dough, and then take it out for your pizza, croissants, or whatever. (You have to bake those in your oven, but the breadmaker helps you by preparing the dough.)
- Select the size of loaf (large, medium, or small).
- Select the type of crust you want.
- Press the TIMER button. The display shows the total time the loaf will take to prepare and cook.
- Press the START button and the countdown to a delicious loaf begins!
When you’re loaf is done (in anything from two to six hours but typically about three to four), you very carefully lift the lid, pull the hot tin out of the breadmaker’s oven, tip out the loaf, and let it cool down. All you have to do in the way of cleaning is wash out the tin (which is helpfully nonstick) and the paddle—which takes about 30 seconds.
Do breadmaking machines save you money?
You’re probably wondering how much it costs to make a loaf this way. It’s impossible to say, really, because it depends on the exact ingredients you use. But with the price of flour soaring and bakeries charging ever more for their loaves, my guess is that a machine like this would easily pay for itself in a year or two, giving you quite delicious bread at the same time.

You might be thinking breadmaking machines are a relatively recent innovation, developed in the last 20–30 years or so? It’s true that small household breadmakers only became popular in the 1990s, thanks to companies such as Panasonic (a brand name of Matsushita Electric Industrial Co., Ltd. of Japan), who pioneered the one-loaf, home breadmaking machine in 1986. But if you think about it, breadmaking machines are obviously much older than this. The mass-produced sliced loaves many people eat aren’t all produced by hand! In fact, mechanical breadmaking machines have been around since at least the early 20th century.

The earliest breadmaking machine I’ve found—the one shown here—was invented in 1903 by Sarah Stearns of Redlands, San Bernardino, California and patented the following year. How does it work? Flour (yellow) sits in a hopper at the top (green). When you turn the handles (gray) on the side, it rotates a paddle (orange) inside the hopper that sifts the flour through a mesh and down onto the rollers (turned by gear wheels). Dough passes between the rollers (red) on a sliding tray with flanges at the edge (darker red) supported by a sturdy frame (blue). What we have then is really a dough-kneading machine; the handles (which work like levers) and gears help to make kneading far easier than it would be by hand. Probably if you had hundreds of loaves to prepare, something like this would save a huge amount of time. What Is Flour?

Flour is typically made by finely grinding a grain into a powder, which can then be used in recipes to create a variety of baked goods. It is used to make cakes, cookies, muffins, tortillas, and bread amongst many other things. While flour is a common ingredient, not all flours are alike. In fact, some flours don’t come from grains at all and can derive from different vegetables, nuts, and seeds. For example, coconut flour, which comes from the dried, ground coconut meat. Not to mention that there are also cake flours, pastry flours, and more.
Although there are numerous different kinds of flour, the two most common baking flours that often get confused are all purpose flour and bread flour. While very similar, there are a few distinct differences between the two that it’s important to take note of. Although mixing up the two flours won’t ruin your baked goods entirely, it can affect your recipes slightly.
What Is Bread Flour?
When originally created, bread flour was designed to be paired with yeast in order to produce the perfect baked good (usually breads). The amount of protein found in bread flour is higher, in order to contain and produce more gluten and achieve the desired rise in bread. Because of this higher protein level, bread flour is able to absorb more liquid, allowing it to hold its shape and rise upward instead of outward. All of these elements create an incredibly sturdy flour that works wonders when used to bake a variety of different kinds of bread. The high amount of gluten in bread flour also creates a more elastic dough, which produces a lighter and chewier bread, as opposed to a bread that is more dense and crumbly.
What Is All Purpose Flour?
All purpose flour was designed with one thing in mind: to be all purpose. It works for just about every flour-demanding recipe, including bread, cookies, and cakes. While bread flour holds a higher protein content than that of all purpose flour, all purpose flour does contain quite a bit of protein. This allows the flour to remain firm and hold its structure, while still providing the perfect texture for cakes. Whether you prefer organic all purpose flour or regular, all purpose flour was designed to be the go-to flour when baking and it does a pretty good job of it. While specialty flours such as cake flour and bread flour may deliver a better result than all purpose flour, the differences are subtle and hardly noticeable by those enjoying the baked goods!

What’s the Difference Between Bread Flour vs. All Purpose Flour?
The main differences between bread flour vs. all purpose flour are the protein content and gluten content. Bread flour has a higher amount of protein and higher amount of gluten which is why it’s good for an airy, chewy bread that needs time to rise. All purpose flour has a lower protein content which makes it good for cookies and cakes that don’t need to rise. Here’s a brief rundown of the key differences between bread flour vs. all purpose flour:
- Bread flour has a higher protein content (around 13% more), which leads to more stability, form and rise in the dough, allowing it to lift and hold shape
- All purpose flour has a lower protein content, resulting in lighter, shorter breads, which makes it an ideal flour for cookies, cakes and more
- All purpose flour contains less gluten than bread flour
- The higher content of gluten in bread flour makes it ideal for airy, chewy bread, rather than dense bread
Is Bread Flour More Expensive than All Purpose Flour?
Bread flour is typically more expensive than all purpose flour. Bread flour typically tends to have better baking qualities that make it favorable for those that love baking fresh bread at home. If you love your bread to be airy and chewy, bread flour is worth the extra splurge for better bread results.
Can You Substitute Bread Flour and All Purpose Flour?
The answer is yes! If you’re wondering if you can use all purpose flour in place of bread flour or vice versa, you can! While the results may not be exactly the same, it will not ruin your baked goods entirely, and you’ll still end up with a great result.

Whether you are making pancakes, muffins, bread, or cookies, it depends on the results you want from your baked goods. While it is possible to substitute the two, it’s important to note that the flour called for in the recipe will almost always provide better results. Based on ingredients, cook times, and other variables, certain recipes were created with a specific flour in mind. Because of this, the flour called for tends to work best during the baking process. However, if you’ve already started whipping up a batch of your favorite whole wheat banana bread and suddenly realize you’re out of all purpose flour, using bread flour in its place will work as a suitable replacement!
How to choose a home bakery
Why get a home bread machine?
If you want to bake bread at home, a home bread machine will save time and make it easy and convenient to bake. These are the two main benefits of a home bread machine. Just put the ingredients in the pan, set the program, and you are done. Using a home bread machine is as easy as using a washing machine. Just turn it on and wait for it to finish. You can even sleep while it is doing all the work. Without a bread machine you must knead the dough by hand, wait for it to rise (sometimes twice), shape the loaf, put it in the oven, and take it out when it is finished. For some people, all these steps keep them from ever making their own bread at home.
This is why there are home bread machines. Even beginners can bake a great loaf of bread, and it is much healthier and cheaper than buying it from the store. You can use a ready-to-bake mix, or any recipe you like. You can make so many different types of bread – whole wheat, herb, onion, cheese, or even banana.
Many bread machines can do more than just bake bread. For example some machines let you make jam, cracklings, yogurt, and more. Most bread machines can also prepare meat. If these are features you would use, a bread machine can become a much more versatile machine.
Factors to consider when choosing a bread machine
So you’re interested in a home bread machine, but aren’t sure which one to choose. Here are some things to help you choose the right machine
1. Will I even use the bread machine?
Think about how often you bake and what the chance is that the bread machine will sit gathering dust. Ask friends who use a bread machine how often they use theirs, and for what purpose. Look online at forums and reviews for various models. Then ask yourself the following questions:
- Are you interested in a healthier lifestyle, one that involves healthy or whole grain breads, unlike what you can buy in the store?
- It is important for you to know what ingredients are in the bread you are eating?
- Are you celiac and want to save money on expensive gluten-free bread?
- Have you been baking bread at home for a long time, but would like to do it more easily?
If you answered yes to any of these questions, then it’s safe to say that your bread machine would get regular use, and not sit gathering dust on a shelf.
2. For how many people do you bake?
Do you have a large family or just live with a partner? On the market you have to choose between bakeries that bake bread in the range of 500 – 1800 g. Some machines can only handle small loaves, while others can handle medium-sized loaves as well. Only a few machines can make large loaves.
3. Cheap or expensive?
The answer to this depends on how much you are willing to invest in a bread machine. You can find cheap machines for as little as 50 euros that can be fine for occasional use. But if you bake often and want a durable machine, you will need to spend more. Also, you will be less likely to use a cheap machine because cheap machines tend to have problems such as incomplete kneading, noisy operation, peeling metals in the pan, and poor construction. Also, cheap machines are often made from plastics which can, over time, break down and create dangerous fumes. Aluminum is better, but not ideal. The best machines are made from stainless steel, which is durable and doesn’t have any dangerous side effects.
4. One or two kneading blades?
If you know that you will only bake small loaves and you prefer a particular one-blade machine, then it can be enough. If you plan to knead large amounts of dough, it can be a problem in a machine with only one blade. Also, one-bladed machines cannot make long loaves, but only small and tall loaves. Also, one-bladed machines are usually not much smaller than two-bladed machines, so you won’t save much space going with a one-bladed model. We recommend choosing a two-bladed model, whether you use it only for baking bread or for mixing and rising dough that you later shape and cook separately in the oven (like rolls, cookies, etc.)
5. How well does the machine knead the dough?
Much of this relates to our previous point. Beyond this, to see if a particular model is good at kneading, check with a friend who already owns it, or look at the online forums regarding that model. Keep in mind that it is common for most machines to need a little “help” with reaching all the dough. For example, using a wooden spoon to scrape down the sides of the bread pan or push the dough closer to the blade can be helpful.

6. Will you use the machine just for bread or for other things as well?
The vast majority of bread machines have a few preset programs. Check to see what programs a particular model offers, and if this would be suitable for your needs. For example, most bread machines have a “jam” setting which will not only make jam, but also cracklings. But only some machines have a “gluten-free” setting (any machine can bake gluten-free bread, but only some have a program for it to make it easier). A few machines have a setting for yogurt, and other machines can make baguettes. Some machines have a dispenser for things like raisins or sunflower seeds, although these are of limited use since they are rarely used. Some machines use folding kneading blades, which have some advantages, but also the disadvantage of difficult cleaning and they cannot be removed from the bread before baking. Do you want to make lunch or dinner in your machine? It is possible in many models to bake meat or chicken. You can look online to see which models offer this, and how they do it differently.
7. What kind of controls does the machine use?
Every bread machine should be easy to use. Clear, well-labeled controls can make using a machine much easier. Check the control layout to see if it is simple and clear. An illogical jumble of buttons can lead to an unused machine.
8. Do you have space in your kitchen?
You need to make sure you have enough room on your kitchen counter for a particular machine, especially if you plan to use it regularly. A machine kept in the closet will be less likely to be used. Make sure to measure the space before you buy, and remember to take into account enough clearance for the lid to open.
9. How much energy will the machine use?
If you are concerned about energy usage, remember that the maximum power consumption stated is only used when the bread is actually baking. Even though it can take several hours to bake a loaf, much of that time is spent letting the dough rise or in kneading. Unfortunately, many bread machines, even top-quality ones, require a cool-down period before the baking can begin. What this means is that, with certain recipes, risen dough can fall down while waiting for the machine to cool down from the heated rising phase before baking

When choosing a bread machine you need to look at the discussions and reviews on the internet. Make sure to read the follow-up reviews or replies to these negative reviews. Here are some complaints you may see:
Thumbs down! The machine only has a heating element in the bottom third, which means the top part never gets baked enough.
‘What this means: All bread machines have a heating element in the bottom third. This isn’t a design flaw, but is the way all machines are made. If the bread comes out cooked unevenly, this usually means that it was either baked at too high a temperature or for too short a period of time. It is preferable to bake at a lower temperature for a longer period of time for the best evenness of baking. Another cause of this could be dough that is too heavy for the intended use, or a recipe with a bad ratio of dry to liquid ingredients. The usual culprit here is using too much flour.

What it means: In a bread machine, the bread is in contact with the bottom and sides of the pan, so a crust can only form on the top. This isn’t a flaw, but how all bread looks from a bread machine. It is still far better than anything bought in a store.

What it means: Kneading blades take space, so they will always leave a hole or tears in the loaf. Some machines allow you to remove the blades before the baking phase, while others will fold down before baking. Either way there will still be some hole or tear. Folding blades have the advantage of allowing less tearing of the loaf after baking. Removable blades will leave less damage, but the small turning axle will still leave small holes in the bottom of the loaf. Both of these are preferable to machines that leave the entire blade in, which cannot be removed without significant damage to the loaf.

What it means: Sometimes this happens and sometimes it doesn’t. Almost always, however, the machine is not the reason. It usually lies in the recipe, or in the way the ingredients are added, or the temperature of the liquids. The cause of a sunken loaf is often too much of the liquid ingredients, or an incorrect amount of yeast. It can also happen that the user selected the wrong program for the size of the loaf being cooked. With practice, this problem usually solves itself. Someone bread will lead to someone not. Almost always, however, the fault is not in the bakery. You must choose a different approach or recipe and gain some experience with baking. The cause of forfeited bread is often too much water / milk / oil (liquid ingredients) or yeast / sourdough recipe. Some bakeries in turn is necessary to set the cooking time by weight of the dough. It is therefore possible that a consumer erroneously chosen program for small bread.

Is a Bread Machine Worth it?
My short answer is “Yes! You need a bread machine!”. A breadmaker may only make one loaf at a time, but once it is set, it perfectly mixes, kneads, and proofs the bread at the proper temperature for the exact length of time it needs.
Even though baking bread in the oven is fun and results are often delicious, you do need plenty of time and energy to experiment with what works to get the best loaf of oven baked bread. However, most people run into problems trying to get their bread to come out perfectly. Proofing can be especially tricky and when it’s not done properly, the bread will come out dense and hard.
That’s why I recommend a bread machine to anyone who wants to bake bread on a regular basis to save both time and money.

Cost Efficiency
We find that bread machines are typically very energy efficient, so we save on energy costs over baking in the oven all day. As for the cost of the bread itself, if you typically buy the generic loaves of white bread for around $2 per loaf, making your own will not exactly be quite as cost-efficient.
But if you typically buy loaves of higher quality bread in the mid to high price range, you’ll find you can really save your grocery budget by making them at home. Bread machines call for simple inexpensive ingredients (flour, yeast, salt, sugar, water) that you often have in your kitchen, so supplies is usually not a major cost when it comes to using a bread machine.
Time and Effort
Bread machines take around 2-4 hours to fully make 1 loaf of bread depending on the type of bread you are making. But it does it all automatically. When our time is valuable and/or limited, this can actually save us a ton of time and energy. Plus, we still get fresh warm bread right out of the machine once it is done.
I can make 3 loaves of bread per day in a bread machine and I don’t have to worry about mixing and kneading it properly, proofing it the ideal length of time at the perfect temperature, and then actually baking it. I simply pop the ingredients right into the machine and it’s good to go!


Cleanup
My favorite convenience of a bread machine is the cleanup. Or how little cleanup there is. I simply have to wash off the pan and that’s it.

If you need an affordable bread maker, take a look at the compactCuisinart CBK-110 which can make up to a 2-pound loaf and has 12 program options. You can also consider the Oster bread machines as they are usually widely available and well-liked. What does a bread machine do?
Simply put, it makes bread. To make bread the old-fashioned way by hand requires proper mixing, kneading, proofing, punching down, re-rising, and baking. Essentially, a bread machine does all of that for you so you don’t have to!
As I mentioned above, many machines have programs that will help you make the perfect loaf of bread depending on what type you are making and how dark you want the crust. If I was making bread by hand I would have to manually check every little thing. Every step of the way I need to adjust and tweak to make things just right. And while a bread machine isn’t perfect, there are far fewer manual steps and work you have to do.
A lot of people use a bread machine to properly mix, knead, and proof their bread. Then they transfer the dough to a pan and cook it in their oven. This way they avoid the indents in the loaf left by the paddles. You can always remove the paddle manually after the mixing and kneading is complete and have only a minor dent from the peg that holds the paddle.
Or you can leave the paddle in and still get delicious fresh bread. It just has a dent. It’s up to you! The point is that the machine automates a large majority of the breadmaking process so you don’t have to do as much work yourself.

Is It Cheaper to Make Your Own Bread?

It’s considerably cheaper to make your own bread than to buy it, if you’re comparing similar types of loaves. In a recent comparison*, the ingredients for a loaf of homemade classic sandwich bread cost $2.06, or 13 cents per slice. If you add in the cost of energy used by the oven, it’s only about an extra cent per slice. A loaf of hearty Arnold Country White costs $4.29, equaling 27 cents per slice. However, if you buy the very cheapest store-brand loaf of white bread, the cost goes down to 5 cents per slice.
There are some other considerations for baking vs. buying though, mainly nutritional value, time and taste.
Nutritional value
While you may be able to get store-bought bread cheaper than homemade, you can better control the quality and nutrition of ingredients in a loaf you bake at home. Commercial bread that sits on the shelf requires a lot of preservatives to keep it from getting stale and moldy. In many cases, you can’t even pronounce some of the ingredients! When you make your own bread, you can decide exactly what goes into it and the quality of those ingredients.
Time
No one will argue the fact that it takes more time to make your own bread than to buy it in the store. But most of that time isn’t spent actively working with the ingredients – instead, it’s a few minutes here and there between waiting for it to rise, which can take a couple of hours or even overnight, depending on your recipe. If you’re already in the kitchen for holiday cooking and baking, adding a few bread-related steps in between other recipes won’t add much time to your busy schedule.
Taste
There’s no comparison to the taste of freshly baked bread! The earthy smell, the bubbly texture and the crispy crust are all qualities that contribute to the delicious taste. And once you’ve mastered a recipe, you can start experimenting to attain different textures and crusts. Store-bought bread isn’t going to taste as fresh because it’s designed for shelf stability first.
Tips for homemade bread
When you want a mouthwatering loaf of bread for a special occasion, make your own. If that idea is intimidating, follow these tips for an easier experience.
- Read the recipe thoroughly to learn how much time it will take. Count backward from when you want to eat the bread to determine when you should start.
- Let all your ingredients come to room temperature before you mix them together. Also, be sure to use fresh ingredients – not the package of yeast you found in the back of the pantry from a couple years ago!
- If a recipe lists amounts in weight in addition to cups, go with the weight for better accuracy. You want to use the least amount of flour required.
- If you don’t have a warm place to let the bread rise, consider placing it under a light or warm air vent.
- It’s best to wait until the loaf is completely cool before slicing it, as to not smash the loaf. Be sure to store it in a ziptop bag or airtight reusable container to keep it fresh for as long as possible.

ABOUT BREAD MAKERS
Bread makers (or “Breadmakers” – one word or two, take your pick) take between three and four hours to bake an average white loaf and a little longer (say four hours) to bake a wholemeal loaf.
Generally you add the ingredients to the bread maker – either in the shape of a pre-mixed bread mix or by measuring out the ingredients yourself – and the machine then kneads and proves the loaf for you before baking it. It is not a quick process though and expect it to take at least 3 hours per loaf.
Loaves from bread makers tend to be more square in shape (due to the shape of the bread pan) than shop-bought but on average are about 800g, the same as most average shop-bought loaves.

Many bread makers have a delayed timer which means you can put all the ingredients in and then set it to start baking up to 13 hours later. This is really useful if you want to have the bread maker come on over night (when electricity can sometimes be cheaper too – depending on your tariff and provider) so you can wake up to a freshly baked loaf in the morning.
The bread maker’s kneading function can also be put to good use for making pasta dough, dough for rolls and pastries. You can also bake cakes in some bread makers – the instructions will generally include a few recipes for you to try.
HOW TO STORE BREAD
Home-made bread won’t have any preservatives in (a good thing) but it does mean it won’t last as long as shop-bought bread and tends to dry out after about 3 days.
To stop bread drying out let it cool completely before storing it. Then either wrap it in foil or seal it in a good bread bin.
This bread bag is good value and won’t take up space on your work top (you could hang it in a food cupboard). And at around £9.99 is well priced.
If you have a bit more budget, this is a nice classic bread bin – retailing at around £34.99.
This one, by Joseph Joseph is a bit more expensive (£59.99) but I love how the lid doubles as a bread board.
Loaves can be frozen so you can batch bake loaves and store them in the freezer ready to use.
MAINTAINING & STORING YOUR BREAD MAKER
Never put your bread pan in the dishwasher as it might scratch the non-stick surface and cause your bread to stick. Instead soak it in soapy water and wash by hand.
Bear in mind that bread makers can be quite large so may take up a chunk of space on the work top. It is a good idea to think about where your bread maker might sit while it is in use and/or if you have the space to stash it away somewhere when not in use.
As with any appliance that cooks something bread makers, although insulated, may still get quite hot when in use – especially if it has a chrome exterior – so be careful when handling a hot bread maker and keep them out of reach of small children.
BREAD MAKER RECIPES
You can control the recipe for your bread so if you need gluten-free flour, or reduced salt then it’s easy to adapt the recipe or ingredients accordingly.
However as gluten is what makes the texture of standard bread then you need to make sure you use the correct gluten-free flour and have a ‘gluten-free’ setting on your bread maker to ensure it is baked to perfection.
Additionally if you are trying to reduce palm oil use (see our blog on how to avoid palm oil) then baking your own bread is a great way to do this as many shop-bought loaves contain palm oil but if you are baking your own you can avoid this.
IS A BREAD MAKER CHEAPER THAN SHOP-BOUGHT BREAD?
This can be a bit of a how long is a piece of string question because it depends entirely on the type of bread you usually buy.
If you always buy the cheapest supermarket loaf (for example from discount supermarket Lidl the basic white loaf is 50p) then the investment in a bread maker is unlikely to pay off.
However, if you love a speciality bread and haunt your local artisan bakery (for example at Gail’s a sour dough will set you back £3) then a bread maker could save you some serious cash over the long term.
So let’s break it down.

From the top of the range… this top of the range Sage bread maker has multiple 13 different modes, has three different ‘crust colour’ selections, a special fruit and nut dispenser (with an alert to tell you when is the best time to add it) and includes 9 ‘custom modes’ for you to save your own favourite bake settings.
It comes with a price to match the spec though, starting at around £214.99 from Amazon (cheaper than from John Lewis, ao.com or even bargain favourites of ours Lakeland).
Through the mid-range… this Gastroback Breadmaker model has many different modes including ‘ultra quick’ and special modes for jams and cakes. It even comes with its own detachable set of scales – which is another money-saver.
This one is a bit more affordable at around £139.99 also from Amazon (again, cheapest market price – cheaper than on Curry’s and the same as John Lewis and ao.com – we like to find you the best price!).
Best cheap bread maker
To the lower end of the market… this Russell Hobbs bread machine from Dunelm is considerably cheaper than the others but still has 12 different program settings and a delay start timer.
In the ‘cheap and cheerful’ bracket, this 2lb Tower Bread Machine available from Robert Dyas comes in at just £49.99 at time of writing, including a £20 discount!

HOW MUCH DO INGREDIENTS FOR BREAD MAKERS COST?
To bake a basic loaf you can buy pre-mixed bread sachets (for example this one from Sainsburys which makes a crusty white loaf for 80p or this more fancy mixed grain mix by Wrights which is £1) which mean you just have to pop the ingredients in the bread maker and away you go.
Alternatively you can buy the raw ingredients, for example:
- Sainsburys strong white unbleached bread flour 1.5kg is £1.05 – this should make 3 loaves at 35p per loaf
- Fast action dried yeast from Sainsburys is 85p – this comes in 8 sachets and you need approximately one sachet per loaf so it breaks down as c.10p per loaf.
Most recipes advise using either a few tablespoons of oil or butter, plus a pinch of salt and/or sugar so I’ll add on a generous 15p to cover this.
This takes the cost for a basic white loaf to 60p.
Even the most fancy organic bread flour (for example this mix) is only £2 for 1.5kg, so about 66p a loaf.
Therefore long term making home-made bread will work out cheaper than all but the most basic shop-bought loaves.
If you factor in the cost of a bread maker, for example a mid-range one at £100 and… let’s say you usually buy 2 fancy loaves of bread a week at £3 each it would take you about 17 weeks of making your own bread for the bread maker to start paying off.
HOW ENERGY EFFICIENT ARE BREAD MAKERS?
Most bread makers are fairly efficient and according to expert reviews use about 0.41kWh of electricity when making a standard loaf of white bread, which works out as about 6p per loaf.
BREAD MAKER VS. OVEN?
If you already have an oven you might be wondering why you need a bread maker too? After all you can cook bread in the oven too. This is very true and there are other perks to baking your home-made bread in the oven too:
- You can batch cook and make a number of loaves at a time
- You can cook a number of different types of bread at once
- It is more energy efficient to batch cook so you would save energy in the long run.
However, some people find the endless kneading and proving needed to bake your own bread in the oven is a real faff and far prefer the ease of letting the bread maker take care of that.
Additionally some people find that getting the correct proving temperature difficult and this can result in dense, hard loaves – a bread maker will ensure that the bread proves evenly and at the correct temperature which can be hard to reproduce in your own kitchen.

The Real Bread Campaign has compiled some statistics to show that bread makers are more energy efficient than ovens:
In short a standard bread maker uses 0.36 kWh per loaf to bake a white or wholemeal loaf on the standard setting whereas baking a loaf in an electric oven is about 1.6kWh per use and a gas oven typically consumes around 1.5kWh of energy per use.
COSTS OF A BREAD MAKER
Based on an average consumption of 8 loaves per month (96 loaves per year):

Based on the above, if you’re currently buying bakery bread at anything north of £1.50 per loaf (not even the £3 artisinal bread cost we used here) you could make a saving by using a bread maker in your first year.
If you just buy the cheapest supermarket own brand bread – or anything south of £1.50 a loaf, you’d need to use a bread maker for over a year before you saw any savings.
If you spend less than 70 pence per loaf, you’re unlikely to see any savings by using a bread maker.
HOW EASY ARE BREAD MAKERS TO USE?
Very.
Most modern bread makers do all the kneading and proving for you so all you need to do is weigh out the ingredients and pop them in the machine.
This really takes the effort out of making bread, however each cycle on the bread machine takes at least 3 hours so it is not a speedy option if you need a sandwich right now.
CONCLUSION
If you like fancy bread then a bread maker is a great way of making your own for a fraction of the cost – but bear in mind it may take years and many loaves to recoup the initial cost of the bread maker (one way round this is to buy a second-hand bread maker from a site like Gumtree or a local charity shop, this is also a good way of testing out if you enjoy the process before investing in a more costly machine).
If you enjoy cooking and have the time to devote to kneading and proving then baking your own bread in batches in your own oven might work out to be even more cost effective as you need not invest in a machine (or find the space on your kitchen work surfaces).
If you only ever eat the cheapest supermarket bread and only get through one loaf a week then it is probably not worth your while investing in a bread maker.
Is A Bread Machine Right For You? The Pros and Cons

Bread machines have been around for many years now. They have gone through rigorous public testing and scrutiny. The companies that build these machines have learned and listened to the public over these years as well. So if you are asking whether or not to get a bread machine here is my answer:
You should get a bread machine if you need to make many loaves or need the extra convenience. Maybe you are tired of making bread by hand and have a busy schedule or have a physical disability. It could very well be a budget issue or you are just new to bread baking. Any of these reasons will make you a perfect candidate for a bread machine.
Look at it this way. If you have a bread machine it does not mean you will not be able to make artisan bread. It only means that you have an extra tool in your arsenal. I can hear my father-in-law and me arguing about it around the dinner table as I’m writing this post: for and against a bread machine.

The price of bread can vary as you know. Cheap white bread ( that I would not even consider ever buying ) is around 3 USD. Artisan-style bread from very good bakeries can cost up to 15 USD or even more.
For the purpose of this calculation, we will take an average of about 6 USD a loaf.
Meaning you will save approximately 4.50 USD per loaf.
If you bake one bread every week that is 52 x 4.50 = 234 USD Savings
The average breadmaker will cost around 150 USD with the most expensive about 320 USD so it is clear to see here how much money this can save you especially if you have a big family and bake more than one bread a week. You could be saving hundreds if not thousands of dollars a year.

Baking and Crust
There is just something about bread out of the bread machine that I personally do not get too attached to. This is the crust of the bread. It is much like the crust out of any bread baking pan. This is not really a “Con” but a slight drawback in my preferences for bread.
You don’t get that crispy hard crust that I personally love. This is because these machines do not bake with steam and are baked in a pan.
You could if you wanted to use the bread machine for the mixing, first rise and punch stages, then take it out for the shaping and final rise and bake it in your oven if you’de like a thicker crust. So in that sense, a bread machine can assist you part of the way.
It Needs Constant Supervision On Your Part
Now, this all depends on which machine you get. Some machines are not programmable and fully automatic and you do need to supervise the process.
These machines do have timers on them so you will need to check up on your dough at every stage which makes this process less convenient. So if you are looking for a hands-free hassle-free bread machine you will need to spend a bit more on them.
I strongly suggest getting a bread machine that is fully automatic and hands-free.
Another Gadget On Your Countertop
I’m the first to admit that I’m a gadget lover but at the end of the day, all these products need space (my wife rolls her eyes on me in silent frustration every time I come back home with another great invention we simply “must-have”).
A bread machine is not a small gadget so if you do not have a large kitchen where it can rest undisturbed on your countertop, consider that you need to find a storage space for it, and then there is the whole process of taking it out of storage and putting it back. All I’m saying, make sure you don’t buy a fitness bike only for it to become a very expensive clothes hangers over the years:).
Before purchasing a bread machine check the dimensions and make sure you have counter space for it as it will most likely be sitting on your counter all the time. You will not be shlepping this machine in and out of the cupboard all the time as some of these machines are quite heavy as well.
Sourdough In The Breadmaker?
It is not totally impossible to make sourdough bread in a bread machine but keep in mind that more often than not your breadmaker will not have a preset program for sourdough bread.
Sourdough bread has different rise and proofing times ( usually much longer than using commercial yeast ) and is the main reason why bread machines do not do well with these recipes.
In order to counter this issue, bread machines do have manual modes on them so you can adjust these times yourself but it will take some more time and testing out of you to figure out exactly how to make sourdough bread in your bread machine.
Bread Made With A Bread Machine Is Not Immune To Problems
Bread machines are not immune to baking problems you might get when baking without one.
On paper, bread machines sound simple and easy to use but can present challenges to the baker and cause great frustration.
Common problems in using bread are:
- Bread collapse in the bread machine
- Bread does not rise partly or completely
- Bread comes out heavy and dense
- Bread is gummy inside
- Bread has an unbrowned top
- Bread has a large hole
- Bread is lopsided

These issues usually start to happen when you try to be more creative with your bread making and start to search on the web for new recipes.
When getting a recipe online from a third party it has many variables that you might not be aware of. For example, the type of flour that someone used is not available in your part of the world and you end up replacing it with a different brand. The water you use is different. Your bread machines are different and so on.
NOTE: Bread machine companies have a baker as a consultant when they engineer these machines. Use the recipes on your bread machine manual ( most bread machine manual come with recipes ) as these recipes were put together by a professional baker that has experimented with these machines and has specifically tailored these recipes to that specific bread machine.
A Bread Machine Can Be Noisy And Vibrate A Lot
From my research, I also found that many if not all bread machines can be quite noisy, your mixer is probably quite noisy as well I guess.
Another common issue is that the machine vibrates and dances around on the counter. There have been mishaps in the past with breadmakers dancing of the counter and plummeting to their death.
Conclusion
The bread machine is very useful. I would definitely recommend it for all the reasons I mentioned above. You might look at this Pros vs Cons and say ” hey! there are more cons here.” I would have to negate that by saying that the weight of the pros outweighs the Cons just because of the issues of time and money.

I often get asked if making homemade bread is really cheaper than just buying bread. There are lots of factors to take into consideration when deciding which DIY projects and homemade products you’re going to take on.
In the very beginning of our journey to pay off six figures of student loan debt in a hurry, we cut out absolutely every expense we could, including buying bread. Then, when I was pregnant with my youngest (who is now nearly two), I started buying bread. I felt kind of guilty about it (mostly when I would see traffic from my blog post about how homemade bread is helping us pay off our debt), but I just couldn’t manage to stay upright for long enough to make bread when I had higher priorities for the times when I felt well.

Ingredients

- 1/3 cup oil
- 1/2 cup honey or brown sugar
- 1 1/2 Tablespoons yeast
- 8 cups wheat flour (divided 3 cups, 5 cups)
Price Breakdown for Homemade Bread
I’m guessing that if you are interested in the price of homemade bread then you are a frugal person who is a smart shopper. Since we don’t have an Aldi (the nearest one is 5 hours away), I shop at Winco. Their prices are the best in the area.
Wheat Flour/Freshly Ground Wheat
Freshly Ground Wheat Flour
I grind my own wheat (with the help of my wheat grinder, of course) instead of buying wheat flour. In Winco’s bulk foods section, wheat berries cost $.45/pound.
One pound of wheat berries is about 2.25 cups of wheat berries, which means each cup of wheat berries costs about $.20.
Each cup of wheat berries makes about 1.5 cups of flour, which means each cup of home-ground flour costs about $.13
My recipe calls for about 8 cups.

Yeast is one of the groceries that I buy at Sam’s Club. I took the price from Amazon since I don’t know the Sam’s Club price off the top of my head. If I remember right, though, it’s about $5 for two of these packages. I’ll use the Amazon price in this illustration though, even though I’m fairly certain it’s more expensive than what I buy.
$7.69 for 1 lb (48 Tablespoons) = $.16 per Tablespoon

I use normal canola oil in my bread.

My recipe works fine with honey or brown sugar. As you’ll see in the price comparison, it’s significantly cheaper with brown sugar, but if you are particular about the types of sugars you use, then honey is a great choice.
